We are celebrating 25 years of Riesling this year and we thought it was time to update the packaging to reflect our core values. You've know about our love of Riesling for a while now, but did you know we're committed to sustainability? Some wineries use as much as 10 gallons of water for every gallon of wine they produce, we only use 1 gallon of water for every gallon of wine produced! Also, now 100% of the energy used at the winery is offset using wind power credits! Finally, we felt it was time to talk about our beautiful state of Washington with an ode to the shape on the front label.
Rest assured that the wine inside the bottle is the same great Sweet Riesling you've always loved!
We pick our Riesling grapes early (20-21 Brix). We use only native yeast and ferment at low temperatures in stainless steel tanks – there is no use of oak barrels or malolactic fermentation. We stop the fermentation at about 7% residual sugar, and we clean the wine rapidly to retain as much freshness and fruitiness as possible. We leave a fair amount of natural carbon dioxide in the wine to create a lively mouth feel.
The resulting wine is moderately sweet and refreshingly low in alcohol - less than - with flavors of pineapple and peach. Our Sweet Riesling brings perfect balance to all fiery fare - especially Thai, Szechwan and Caribbean cuisine... or simply enjoy as an aperitif.
