My mead ranges from 15% to 16% ABV. This is well above wine, which typically ranges from 8% to 12%. It is strong!
I've been asked many times what my mead tastes like.It can probably be described as a golden, oaked honey port. Even sherry-like. It still has some rawness to it, since I have not read in any of my studies that the Vikings had wine cellars to condition their mead or chemicals that some modern wineries use to stop fermentation.
I have had people tell me that their favorite way to enjoy this is to have it over ice, as they would do with a glass of bourbon. It goes well with a hearty meal or even hot with mulling spices on a cold winter day.
There is nothing better than having a couple bottles to share with friends and family over dinner or around the fireplace on a brisk evening.
Over time, the mead will mellow out the flavor. I have mead that I've let age in my cellar for almost a decade and it just keeps getting smoother. - Peter Voelker, Owner
