When we first met Koji Kawakami, 17th generation President of Yoshinogawa, at his favorite restaurant late one evening, he poured sake from a tokkuri (saké carafe) to relax his guests. The saké was deep and tasty. Crisp fennel laced the nose, while the seductively light body opened up to herbal overtones and floral highlights. Koji-san saw our delight and said that this is his personal favorite saké. Five or so bottles later we learned it was Gokujo Ginjo, the elixir we now proudly offer to you.
Enjoyment: Sip with classic Japanese dishes from fatty hamachi (yellowtail) nigiri to nutty soba noodles or spicy miso ramen. But if you have to pair it with just one thing, make it a close friend.
