    GROWING REGION – VINEYARDS:

    Paso Robles is located between San Francisco and Los Angeles along California’s Central Coast. The region enjoys a greater day-to-night temperature swing than any other appellation in California. There is great diversity in the region, distinct microclimates, over 45 different soil types and a long growing season. This makes Paso Robles an optimum region for producing premium wines, in particular Bordeaux varietals like Cabernet Sauvignon, Merlot, Malbec and Petit Verdot. This diversity also allows St. Huberts the opportunity to select the ideal fruit to make this rich, structured and refined Paso Robles Cabernet Sauvignon.

    WINEMAKING:

    Using a modern approach for crafting this wine, the grapes were crushed and fermented an average of seven to 10 days in stainless steel tanks. Pump-overs were gently performed three times a day to extract optimum color and tannin. Post fermentation, a portion of the wine was integrated with French and American oak for up to two years to smooth and round the tannins, add complexity and depth of flavor. Finally, each of the lots were tasted daily to determine exactly which would be selected to go into crafting this Paso Robles Cabernet Sauvignon.

    WINEMAKER NOTES:

    The St. Huberts The Stag Paso Robles Cabernet Sauvignon is deep crimson in color with a fragrant bouquet offering bramble berry notes of dark raspberry, Bing cherry, and red currant, alongside sweet baking spice notes of allspice, cinnamon and vanilla. The wine is robust and round with a medium to full body, alongside layered flavors of dark plum, crushed red berries, cassis and cherry compote, backed up by savory notes of allspice, sweet tea leaf and clove, from the oak aging that softens and rounds the tannins. Well-balanced and plush, this Cabernet leads to a velvety smooth, silky, long finish.
