WINEMAKING NOTES:
The grapes for this wine were grown in the Arroyo Seco appellation of Monterey County in the specific Ste. Philippe vineyards. The sandy soils of Ste. Philippe present ideal conditions for growing Merlot. The soil color, structure and high winds on the valley floor allow the grapes to develop intense red fruit flavors and a deep color. We age our Merlot in French oak barrels which enhances mouthfeel and contributes dark chocolate and vanilla flavors.
TASTING NOTES:
This wine expresses aromas of black cherry, red ripe plum, spice, and hints of vanilla. The palate mimics those fruits with a touch of leather accents and velvety tannins, while a rich and luscious mouthfeel tie the whole package together.
FOOD PAIRINGS:
Grilled herb chicken breasts or roasted pork with a tossed baby arugula salad, blue cheese and cherry tomatoes.
