    THE WINE:
Blackberry, cassis, plum and currant aromas greet the nose, surrounded by black olives, anise, leather and cigar box. Notes of graphite and crushed stone mingle with just a hint of cool mint. Robust and full bodied, an undercurrent of restrained power is palpable just below the surface at the core of this wine. Firm, fine grained tannins provide ample backbone for the layers of boysenberry, black cherry, licorice and dried herb flavors. Meaty and fleshy while retaining an overall elegance, it finishes with authority and finesse.

    THE VINTAGE:
If there was ever a perfect vintage, 2016 would be it. Bud break started early March and the warmth set in very quickly. The onset of veraison came rapidly and earlier than normal because of a very warm June and July. There were a few scares because of the raging fires throughout the region but fortunately our grapes were not affected. In the month of August, approximately one week away from harvest, very cold weather set in and the sugars stopped accumulating for several weeks allowing the perfect hang time to occur. The 2016 vintage allowed us to make our darkest, most concentrated wines yet. The longer hang time led to supple and very well integrated tannins. The 2016 wines will be long lived.

    DAOU VINEYARDS & WINERY:
Family owned and operated, DAOU Vineyards is committed to producing collectible, world-class wines to rival the most respected appellations in the world. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, our remarkable geology, favorable microclimate, and high elevation were once described by renowned California winemaker André Tchelistcheff as “a jewel of ecological elements.” As stewards of this beautiful terroir, DAOU’s goal is to make unique fine wines that honestly and accurately reflect the potential of the estate and to craft Bordeaux style wines that combine Old World tradition with New World techniques.

BARREL AGING: 10 months in 60% new French oak

    ALCOHOL: 13.9%

Deep garnet-purple in color, the 2016 Cabernet Sauvignon reveals a nose of crème de cassis, plum preserves, cigar boxes, and garrique with dried herbs and sandalwood in the undercurrent. The medium to full-bodied palate delivers tons of ripe black fruits, licorice and dried herbs with a chewy frame and good balance. - Robert Parker 89 Points
