Vineyards: Selection of vines harvested at optimum maturity. South exposure. Chalky-clay soils.
Grape Varieties: Grenache and Rolle.
Vinification: Grapes harvested in crates, only in the morning. Sorted-out twice. Maceration at 10-12°C to extract aromas. Vinification in stainless-steel vats. Temperature controlled. "Bâtonnages".
This assemblage has been made without barrel fermentation to keep the freshness and all the fruit flavors. - Winery
