Apothic is a true original. Named for the mysterious place, Apotheca, where vintners stored their most coveted concoctions in 13th century Europe, Apothic blends fuse Old World intrigue with modern sophistication. Winemaker Debbie Juergenson lets the character and flavor of each varietal guide the shape of her wines. In addition to the two bold wines that started it all – Apothic Red and White – Debbie offers a selection of limited release blends.
The grapes for Apothic White were harvested at night to ensure that they arrived cool at the winery for pressing. Prior to fermentation, the juice was separated from solids by centrifugation to guarantee clean ferments with pleasant aromas. Fermentation occurred at cool temperatures to retain each variety’s natural flavors. A small portion of the wine underwent malolactic fermentation to add just enough smoothness to the mouthfeel while still maintaining the firm backbone of acidity. This wine was aged on select oak to add distinctive notes of vanilla.
