2016 HARVEST:
The 2016 growing season started with an earlier-than-normal bud break and bloom, followed by a warm, but not excessively hot, summer. A warm fall encouraged ripening and resulted in outstanding color and tannin development in our red varieties.
WINEMAKING:
Our red grape varieties from our top vineyards are destemmed and fermented warm on the skins in stainless steel tanks to extract flavor, color, and tannins. After primary fermentation, the wines are pressed from the skins and undergo malolactic fermentation to soften the acidity and enrich the mouthfeel. Our Columbia Valley Cabernet Sauvignon features bold flavors with a full tannin profile. Syrah and Merlot are blended in for added layers of fruit and supple tannins.
TASTING NOTES:
Deep ruby in color, this 2016 Cabernet Sauvignon exhibits classic, concentrated aromas of cherry, black currant, dark chocolate, and roasted oak. Lush and concentrated flavors of blackberry and cherry with hints of cassis lead to a warm, toasty sweet vanilla finish with fine, velvety tannins.
