Vinification:
This sparkling wine, made in the traditional Cremant style, is made entirely from Riesling. The Riesling is pressed whole-cluster in membrane presses thereby extracting a minimum of phenolic. Following the Cremant method, the Célèbre is aged “sur lies” after the estate tirage. Finally, the Célèbre is riddled by hand or gyropalette prior to disgorging.
