Derived from the Italian word gemma, which has a dual meaning of “vine bud” and “precious gem,”Jema is a pure expression of Corvina - the region’s signature varietal. Produced from a 3-hectare single vineyard located in the heart of Valpolicella Classico,Cesari’s “gem” is full, supple, and well-balanced with rounded tannins. Cherries pervade the nose backed by toasted mocha notes lent from 18 months of aging in French oak barrels. The grapes were dried in crates for 20 days prior to vinification. This wine is produced in limited quantities in only the finest vintages.
Tasting Notes:
Ripe red fruit aromas, particularly cherry and currants, fill the nose. Mild toasted undertones and hints of cocoa, cola, and coffee follow. The taste is supple, full, and balanced with an elegant, persistant finish. Open at least 2 hours before serving and pour alongside wild game, grilled meats, Northern Italian stews, as well as risottos and aged cheeses.
Aging:
18 months in French oak barrels, then racked into large oak casks where it rested for an additional 6 months. 1 year in bottle followed before release.
