FERMENTATIONS TOOK PLACE ON THE SKINS IN SMALL STAINLESS STEEL TANKS WHICH WERE MONITORED INDIVIDUALLY. PUNCH DOWNS AND DÉLÉSTAGE WERE ENLISTED ACCORDING TO EACH MUST. TO HELP ROUND OUT THE WINE WHILE RETAINING OPTIMAL ACIDITY AND FRESHNESS, ALL OF THE JUICE UNDERWENT A SECONDARY NATURAL MALOLACTIC FERMENTATION – HALF IN STAINLESS STEEL AND THE BALANCE IN NEUTRAL FRENCH OAK.
10 MONTHS IN FRENCH OAK CASKS (15HL TO 30HL) AND SMALL BARRELS (225L) -- WITH ONLY 10% NEW OAK. THE WINE UNDERWENT AN ADDITIONAL 12 MONTHS OF BOTTLE MATURATION PRIOR TO RELEASE.
A TRANSLUCENT, RUBY RED COLOR, THIS WINE OPENS WITH LOVELY FRUITY NOTES OF BLACK CHERRIES COMINGLED WITH HINTS OF STRAWBERRIES, CEDAR AND TOBACCO. THESE FLAVORS EXTEND TO THE FRUIT- FILLED PALATE WITH ADDITIONAL EARTHY AND SPICY NOTES. A CLASSIC AND ELEGANT EXPRESSION OF OUR CHIANTI CLASSICO TERROIR, THE WINE IS SUPPORTED BY FIRM TANNINS BALANCED BY FRESH ACIDITY AND GOOD COMPLEXITY.

The 2015 Chianti Classico Riserva is terrific. Silky, aromatic and expressive, the Riserva is a beautifully finessed wine from start to finish. Because of its mid-weight, gracious feel, the 2015 can be enjoyed with minimal cellaring. This is an especially sleek style, with quite a bit of freshness for the year, but all the elements are nicely balanced. - Vinous Media 90 Points
The third-largest estate in Chianti Classico after Castello di Brolio and Antinori, Castello di Gabbiano assembles this Riserva from its oldest vineyards. Aged predominantly in large oak casks with a small portion of new French barriques, this shows some upfront mint and chocolate then makes room for plum and savoury dried tomato. It has great density on the palate without being too heavy, and the tannins are supple and polished. - Decanter Magazine 90 Points
