    2019 CABERNET SAUVIGNON || PASO ROBLES:

    The 2019 growing season started cooler than average. As the growing season developed, the temperatures stayed moderate, causing a longer growing season. Despite a longer than normal bloom period, there was great set on the Paso Robles Cabernet Sauvignon. With moderate summer temperatures and few heat spikes, the growing season was long and perfect for the grapes. The cooler temperatures in the mornings and evenings allowed the fruit to maintain its acidity and develop intense, concentrated flavors. 2019 was a great growing season, with great yields, flavors and structure.

    WINEMAKING:

    Primary fermentation over a period of 12-14 days. It was then pressed and transferred to barrel where malolactic fermentation occurred naturally. Aging for 15 months in French oak, 45% of which was new – Taransaud, Sylvain, Nadalie barrels.

    TASTING:

    Our Paso Robles Cabernet Sauvignon is deep, purple-ruby in color with aromas of blackberries, bramble and earthy notes. A juicy entry on the mouth delivers plush and fine tannins with great opulence and velvety texture. Densely layered flavors of dark, wild berries and plum meet rustic, savory herbs, anise, graphite, and a touch of dark chocolate on the persistent mid-palate. A finale of round tannins frame a balanced, lingering finish. It plays nicely with California grass fed beef burgers, balsamic lamb lollipops or grilled beef short ribs.
