Vinification:
Traditional Amarone wine making. Late harvest. The grapes are dried in aired rooms until January, when they are crushed. The must ferments in stainless steel tanks for 50 days at the controlled temperature of 23 -27 °C.
Aging Process:
The wine ages in French oak barrels of 20 Hl for 2 years. Finally it is bottled and it rests for 6 months before release.
Tasting Notes:
Color: Deep ruby red colour with pomegranate reflections
Bouquet: Ethereal nose which reminds of peach blossoms, violet, raspberry and mint.
Flavor: On the palate it is intense, refined; it displays full body and smoothness, with clear notes of dried grapes
Pairings:
Ideal with spicy dishes, game and seasoned cheeses. Excellent with Parmigiano cheese.
Alcohol Content: 15%
Residual Sugar: 7g/L
