Our Dark Horse Chardonnay delights with abundant aromas of baked apple and pear, layered with notes of toasted oak and caramel. The rich, luxurious flavors of this Chardonnay are nicely complemented by a refreshingly crisp acidity, culminating in a smooth, lingering finish.
In 2013, vineyards all over California experienced wonderful fruit development that began in spring with dry, warm conditions. As the warmth continued in June and July, the grape canopies were managed to allow just the right amount of sunlight on the fruit. The late summer’s warmth produced fruit with exceptional flavor and a delicate balance of acidity and sugar.
The grapes for our Dark Horse Chardonnay were fermented with hand-chosen yeasts at cool temperatures around 60°F over a three week period. We added a touch of Gewürztraminer to give the aromas a floral lift and enhance the acidity in the finished wine. Following fermentation, the wine was kept on fine lees for six months to create a textured mouthfeel.
