    Harvest Note:

2015 has shown to be a very good vintage. After a mild and rainy winter, the vegetative start was in the second week of April with the arrival of spring and higher temperatures. The spring rains helped a lot the vegetation and ensured the water supply for the following summer. In June and mid-July temperatures were above the seasonal average, but by the end of July the temperatures lowered, returning to the average thanks to long rainy days, which was really good for the vines. The grapes were of an excellent quality. The wonderful structure and the elegant, soft tannins are the main elements of this vintage.

    Tasting Note:

This wines classic Cabernet aromas and flavors of cassis and black fruits have intriguing dried herb, spice, vanilla and cedar notes. On the palate, jammy fruit leads to firm, noble tannins before a long finish.

    Food Pairing:

Pairs well with roasted meats and hearty poultry.

Aging: Aged in Allier oak barriques, part new and part one year old, for 16 months, and then in bottle for a minimum of 6 months

This is a pure expression of Cabernet Sauvignon from the wild and intriguing Greve in Chianti subzone to the northern side of the appellation. The 2015 Il Pareto is a profound and succulent expression that benefits from a warm and sunny vintage that was particularly kind to late-ripening varieties such as this. The wine achieves ideal ripeness with abundant tones of dark fruit, mocha and cured tobacco. There are no green notes here. This is a full-bodied red with soft textural richness. Some 14,000 bottles were released. - Robert Parker 94 Points

Freshly picked blackcurrants, dark licorice, ash, charcoal, lead pencil and plenty of spicy and herbal complexity. Full body, silky and refined tannins, lovely mint undertones and a long, tight finish. Drink in 2020. 100% cabernet sauvignon. - James Suckling 94 Points

A cloak of spicy oak surrounds black cherry, blackberry, leather and earth flavors. The vanilla note holds the lead, mingling with dusty tannins on the finish. Comes together nicely in the end. Cabernet Sauvignon. Best from 2020 through 2028. 500 cases made. -BS - Wine Spectator Magazine 93 Points
