Great Pinot Noir, like the California Golden Poppy, thrives in cool coastal climates. The Monterey Pinot is a blend of several carefully selected vineyards, all located in cool regions and meticulously farmed for intense ripe flavors. It blends several Pinot Noir clones, from the higher color Dijon clones to the flavorful Jackson clone, for added complexity and balance.
The grapes are cold soaked to extract flavor without harshness and to stabilize color. The fermentation is warm with several pump overs per day. The wine is gently pressed, with some of the wine going straight to French oak barrels and the balance going to tank for settling. The tank and barrel lots are rotated mid season. - Winery
