Vinification: Destemming & skin contact extraction for 20 days at 15-25 oC, use of pneumatic presses. Alcoholic fermentation with selected yeast in inox vessels. Ageing in french oak barrels for 10 months time; bottle ageing for 5 months.
Fermentation in stainless steel tanks. Maturing in oak french barrels of 225 L . Almost 40% new and the rest are of 2 or 3 years old; medium plus burn; 20% batonnage. - Winery
