Apothic is a true original. Named for the mysterious place, Apotheca, where vintners stored their most coveted concoctions in 13th century Europe, Apothic blends fuse Old World intrigue with modern sophistication. Winemaker Debbie Juergenson lets the character and flavor of each varietal guide the shape of her wines. In addition to the two bold wines that started it all – Apothic Red and Apothic White – Debbie offers a selection of limited release blends.
The grapes for our 2014 Apothic Dark were selected from Lodi, where sunlight and diverse soil structures result in wine with complexity and balanced acidity. The 2014 growing season in California was ideal, the dry, warm spring and summer weather brought an earlier harvest. Across the state, harvest yielded grapes with ripe fruit flavors and vibrant aromas.
Grapes for Apothic Dark were harvested at night to ensure they were cool upon arrival at the winery for processing. Grapes were then cold soaked for twenty four hours prior to fermentation. Fermentation occurred at a maximum of 90° in order to maximize the extraction of dark fruit flavors and color in temperature-controlled cone-sweep and upright tanks for up to seven days. A variety of yeasts were used to bring out unique flavors and features from each lot. Following fermentation, the wine was influenced by a variety of oak to add complexity and enhance the coffee and mocha flavors
