Ripassa is the name that Zenato has given to this wine, which is closely related to Amarone.
Immediately after fermentation of the partially dried Amarone grapes, the finest selection of Valpolicella is “repassed”, starting off a second alcoholic fermentation. The alcohol content rises and the wine acquires a richer colour with greater extracts and fragrances. After ageing in the bottle for 6 months, this wine becomes extremely long, plush and velvety, with intense fragrances of red fruits.
