Loading... Please wait...The 2007 Particular Cabernet Sauvignon contains small amounts of Petit Verdot, Malbec, and Cabernet Franc in its blend and was sourced from a single vineyard. The wine was aged for 14 months in new, mostly French, oak. Brier, damp earth, espresso, violets, black currant, and blackberry aromas set the stage for a sweetly-fruited, savory, layered Cabernet with excellent grip, volume, and length. It already displays some complexity which will only increase with another 2-3 years of cellaring.

Piercing oak deals aromas of lemon and graphite, and there’s serious berry fruit, herbal scents and sous-bois to go with that. Lively and showing good maturity and acidity, with flavors of black fruits, vanilla, chocolate, toast and tobacco. Good on the finish, with everything coming full circle. - M.S.

Red-ruby. Musky aromas of redcurrant, smoke, tobacco and underbrush. Supple but a bit reduced, with a subtle sweetness leavened by bright firming acidity. The tannins coat the palate and build, but the wine's sweetness and finishing note of bitter chocolate suggest it will assert its fruit within a year or so.

Notes of cedar and grilled herb frame a solid core of plum and currant fruit that lingers on the finish with an aftertaste of graphite. Drink now. 1,500 cases made. –NW
