Winemaking:
The 2018 harvest was a lengthy one, which ultimately gave us fruit yields higher than average. The even temperatures and long extended hang time made for beautiful flavor development. We chose to craft 100% of the Sauvignon Blanc in stainless steel, which we fermented at 54 degrees in order to lengthen the fermentation time and protect the wonderful aromatic esters. The wine completed its fermentation and aging in stainless steel and was bottled in January 2018.
Food Pairing:
An excellent pairing with fresh oysters on the half shell or Crab Cakes with Citrus Aioli.
