Tasting notes:
Colour: Intense cherry red with a red ruby rim.
Aroma: Delicate, black fruit, balsamic, scrubland memories (rosemary, rockrose and liquorice).
Palate: Delicate and elegant structure, sweet tannins and balsamic species (nutmeg, vanilla and cinnamon). Complex, touched by the delicacy and elegance from the Mediterranean climate.
Vinification:
Harvest: Manual harvest at the time of optimum maturity.
Winemaking: The grapes from each variety have been fermented and macerated with the skins separately during a period of 15/20 days at a controlled temperature not exceeding 28ºC.
Aging: 12 months remaining on American and French oak barrels.
Food pairing:
Stewed meats with creamy sauces, veal ragout, roasted kid chops, Roasted lamb, roasted stuffed turkey, rice and casseroles with meat, fishes such as monkfish, cod or bonito, goat cheese and cured cheeses.
